Week in the Life {Dinner Edition}

Well, it’s been a hot minute. I had some out patient surgery a couple of weeks ago, accompanied by a lovely allergic reaction to my antibiotics, and the whole process, plus the recovery, has been a bit of a beast. Since I haven’t felt well enough to cook lately, this little round up of dinners is coming to you from a few weeks ago, when I was still on the dinner making train.

I should preface this by saying that we are not vegetarians but we do try to eat mostly plant based meals at home with the occasional meat dish thrown in. (Let’s be honest, my kids would live off of chicken nuggets if I let them.) This week just happened to end up being mostly veggie meals…

Green Goddess Salmon Burgers


I’d never made salmon burgers before but I loved this recipe from How Sweet Eats. She is one of my go to blogs for amazing recipes. The green goddess sauce really made the burgers extra awesome. We’re big salmon fans in this house. Even the kids love it, which makes my life a tiny bit easier.

Cheesy Enchilada Rice Skillet


Another one of my go to recipe blogs is Damn Delicious. I’ve been making Chungah’s recipes for years and love them. They’re extremely family friendly and easy for weeknights. I threw tortilla chips on top for the sake of my 4 year old. This is the easiest dinner in the world and really tasty. You can add chicken to it if you want to give it more filling power but I didn’t have any thawed at the time.

Portabello Veggie Fajitas


It hardly took any time at all to throw these portabello fajitas from Minimalist Baker together. Hubs and I loved them but the kids wouldn’t touch them. They got cheese quesadillas with carrots on the side instead. You win some, you lose some. (Next time I make these I’ll lessen or omit the red wine vinegar from the marinade. It was a bit strong for our taste buds.)

Vegan Kofta Greek Salad


This meal pretty much made my week. It was so good and refreshing. As you probably know, regular koftas are made with lamb. These are made with black beans and lentils and the texture is crispy on the outside and a bit soft on the inside. I got the recipe from A Healthy Slice of Life, but I’m also interested in this one from Jamie Oliver. I smashed them into this amazing greek salad and mixed in some hummus. I ate the leftovers for lunch all week. Bonus- my son ate the koftas. He actually likes black bean burgers and these are pretty similar.

Ultimate Snack Plate


Let’s talk about how Snack Plate Sundays are basically saving my life right now. Often by Sunday night I am just done. I don’t want to think about dinner at all. I started throwing a snack tray together as an easy way to get dinner on the table and a way to clean out the fridge at the end of the week and it’s amazing. My kids think it’s such a treat. Funny how putting any food in snack form can do that. We often enjoy our snack plates while watching a family movie. I also made some little cocktail weenies and cheese puffs with pizza sauce for the boys. Why I didn’t think of doing this sooner is beyond me.


Last night we made homemade pizza. Tonight I’m making this Vegetable Bolognese and tomorrow we’re grilling some BBQ Pork Ribs that I picked up at Costco for Father’s Day.

    We have snack night every once in a while too! And ours looks similar to yours. My mom used to make salmon burgers (she called them salmon patties) all the time when I was a kid. In those days she used canned salmon because fresh was really hard to find. Those vegetarian kofta sound yummy.

    Here’s to your better health and return to cooking such lovely dinners again very soon!
    We had salmon patties a few nights ago, leftovers in sandwiches for lunch. Pretty much the same recipe except the patties are smaller. Simpler sauce: mixture of mayo and horseradish.

    They all sound/look good but I’d skip the salmon burgers, but I’d take that snack plate any day, any time.
