Kim here with another dinner menu! Here in Northern Utah April is unpredictable. Some days it’s cold, rainy, and in the 40s. Other days it gets up to the 70s and feels almost like summer. You just never know. So my menu is always a mix of comforting soups for those cold days and cold sandwiches for those hot evenings. Here’s some of what I’ve got planned this month.

- Chicken Chimichangas
- Chips, Homemade Guacamole, & Homemade Salsa
- Broccoli Cheese Soup
- Green Salad
- Ham & Cheese Sliders
- Carrot Sticks
On the weekends I switch things up. I make more of an effort for breakfast and then we have pizza, takeout, leftovers, or easy dinners that require no thought or prep on my part. I also like to make a treat for the week ahead on Sunday nights.
