For March I leaned heavily on tried and true favorites, and didn’t try many new recipes, which made cooking a lot simpler this month. I just needed brainless dinners that I knew everyone would love and would come together quickly. Mission accomplished…here’s some of what we ate.
MONDAY
- Loaded Dawgs- I like pickles, pepperocini, celery salt, onions, tomatoes, ketchup, and mustard on mine.
- Red Grapes
TUESDAY
- Mexican Quinoa
- Cheese Quesadillas
WEDNESDAY
- Ham & Potato Soup
- Green Salad
THURSDAY
- Cashew Chicken Stir Fry
- Basmati Rice
On the weekends I switch things up. I make more of an effort for breakfast and then we have pizza, takeout, leftovers, or easy dinners that require no thought or prep on my part. I also like to make a treat for the week ahead on Sunday nights.
