It’s almost grilling season! In May I start transitioning from cold weather dinners like to quick and easy dinners like sheet pan meals. Earlier this week it was in the 50s so we had chili and today it’s in the 70s! You just never know this time of year. Here are a few of the dinners I have made this month…
MONDAY
- Mini BBQ Meatloaves
- Seasoned Baked Red Potatoes
TUESDAY
- Vegetarian Chili
- Salad, Croissant Rolls
WEDNESDAY
- Sheet Pan Hawaiian Chicken & Peppers
- White Rice, Grapes
THURSDAY
- Chicken Cordon Bleu Pasta
- Salad, Garlic Toast
On the weekends I switch things up. I make more of an effort for breakfast and then we have pizza, takeout, leftovers, or easy dinners that require no thought or prep on my part. I also like to make a treat for the week ahead on Sunday nights.

- Breakfast Sandwich- Ham, Egg, Cheese, & Avocado on English Muffins
- German Pancakes & Bacon
